What it is
An after-dinner digestive blend. Bitter first, then warm. Made to be drunk small, half a cup, standing up in the kitchen.
The sensory experience
Chicory and licorice up front, bitter in the way good coffee is bitter, then the fennel and cardamom come in warm underneath. Ginger at the very end, so it doesn’t just sit there — it does something. Homemade dried orange and ginger give it a brighter edge than the commercial versions ever have.
Materials
- Chicory root
- Sweet fennel seed
- Aniseed
- Licorice root
- Cardamom
- Orange peel
- Ginger root
How it may be used
- Steep one bag in 8oz just-boiled water, 5–7 minutes — longer pulls more chicory and licorice depth
- Drink small, half a cup, after a heavy meal
- Not really an iced tea. Don't fight it.
